Line a baking sheet with parchment and add the cubed tofu. Toss with 1-2 tablespoons of olive oil and bake at 400 degrees for 20-30 mins until crisp.
Mix soy sauce, rice vinegar, sesame oil, chili paste in a small bowl. Set aside.
Bring 4 quarts of water to a boil in a stock pot. Add udon noodles and cook according to the package directions. Drain, rinse, and set aside.
Sauté the ginger and garlic with 2 tablespoons of oil in a large skillet. When the garlic and ginger are fragrant (about 30 seconds) add snap peas, kale, and mushrooms. Continue to sauté for about 3-5 mins mins.
Add the noodles and tofu to the skillet with the veggies.
Pour the soy sauce marinade over the noodles and toss to coat.

Update : The Spanx Wide Leg Pants I had on my blog a couple weeks ago came and I really like them. They are extremely flattering, comfy, and I love the leg length and width. They run true to size I ordered a small. I’m so excited for my new Hill House dresses to come there are still some pieces left if you didn’t get a chance to shop it yesterday (Ellie in Mermaid Print, Nesli in Paisley, & Roxy in Red).

I am just returning from a quick trip to Cabo. We stayed at the new Nobu hotel in Cabo San Lucas. The beautiful resort mixes Japanese minimalism with modern Mexican decor. The perfect blend of sophistication with laid back luxury. The rooms are spacious, beautifully decorated, and comfortable (beds were amazing!). The hotel has three large pools to choose from the Pacific Pool being our favorite with swim up cabanas. The overall service at the hotel was amazing with each room having their own personal ambassador. It was a great way to kick off Summer!
We had two amazing dinners, one at Manta (The Cape Hotel) and one at Cocina Del Mar (Esperanza Hotel). Lunch at Nobu’s Pacific Restaurant was delicious (the shrimp quesadillas were so good!). Now onto what I packed into my carry-on!

Hope everyone had a nice weekend. I stopped by Playa Runway over the weekend. It’s a cute shopping area similar to Platform in Culver City. They have a Farmer’s Market on Saturday, and a cool market place called Free Market. Several chic boutiques and restaurants Alchemy Works, County Line Florals, Teressa Foglia, Loqui (love!), Jeni’s Ice Creams, and Bull & Butterfly (can’t wait to try!). Saturday evening we had dinner at Golden Bull in Santa Monica Canyon. The new patio strung with twinkle lights is a great addition to this casual and cozy neighborhood restaurant. Now onto all the cute new stuff that J. Crew has in store now.
