- 1 whole avocado
- Juice of 1 lemon
- 1 teaspoon dijon mustard
- 1/4 cup white wine vinegar
- 3/4 cup olive oil
- 1 teaspoon salt
- pepper to taste
- Place all the ingredients except the olive oil in a food processor (with an open chute) run until smooth and creamy.
- With the processor running on low, slowly stream the olive oil through the chute until thoroughly combined.
- The dressing should be a beautiful green color and creamy consistency.
