Hasselback Potatoes

Brabant Hasselback Potatoes

Ingredients 

  • 10 Yukon Gold Potatoes or Fingerling *any potato will work
  • Olive oil 
  • Salt & pepper
  • Brabant seasoning *see below

Directions 

  1. Wash and dry your potatoes.
  2. Use a sharp knife like a paring knife or chef’s knife. Place chopsticks or wooden spoons on either side of the potatoes before cutting to keep the knife from accidentally cutting through the potato (click here to see a video demonstration). Slice the potatoes thinly, leaving a 1/2 inch base at the bottom to hold them together (see above picture). If you don’t have chopsticks or a wooden spoon it’s ok to do it freehand.
  3. Once your potatoes are cut line a baking sheet with parchment. Next, drizzle the potatoes olive oil and evenly coat.  Then sprinkle with salt and Brabant seasoning.
  4. Place the potatoes in the oven at 425 °F and let them bake until crispy around 35-45 mins. Halfway through baking brush the tops of the potatoes with olive oil. 

Cajun Brabant Seasoning 

  • 1/4 teaspoon white pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cumin
  • 1/8 teaspoon red pepper

Place all the seasoning in a small bowl and mix to combine before sprinkling on the potatoes.

Breakfast Cookies

Healthy+Vegan

Ingredients 

1/2 cup peanut butter
1/4 cup coconut oil
5 tbsp maple syrup
2 flax eggs (mix 2 tbsps flax meal + 4 tbsp water and let sit for 2 minutes)
1/2 tsp vanilla
1/2 tsp salt
1 1/2 cups almond flour
1 tsp baking soda
1/4 tsp baking powder
1/3 cup chocolate chunks/chips
Flaky salt for topping (to taste)

Directions 

In a large bowl cream together your peanut butter, coconut oil, and maple syrup. You can use a hand mixer or mix by hand with a whisk. Add the flax mixture, vanilla, and  mix. Add in the almond flour, salt, baking soda, and baking powder. Mix to combine. Stir in your chocolate chips or chocolate chunks. Line a baking tray with parchment paper or a silicone mat. Scoop your cookies onto the tray using a small ice cream scoop (about 2 tablespoons). Press them down slightly using your fingers. Bake for 10-12 minutes or until the cookies are golden brown on the edges.

Healthy Truffles

We made these yesterday and they were so good!

Chocolate Coconut Truffles

 

Ingredients 

  • 1/2 of a banana (mashed)
  • 2 cups unsweetened coconut flakes
  • 3 tablespoons maple syrup
  • 7 tablespoons coconut cream 
  • 1 1/2 teaspoons of vanilla
  • 1/2 teaspoon of salt
  • 2 tablespoons of almond butter
  • 1 cup semi sweet dark chocolate 
  • 1/2 tablespoon coconut oil

Directions 

  1. Line a cookie sheet with parchment paper. I used a quarter sheet tray so it takes up less space in the fridge and freezer.
  2. Place your banana, coconut, maple syrup, coconut cream, vanilla, salt, and almond butter into your food processor and pulse until fully combined. 
  3. Once it’s all combined take a small scoop and begin to scoop your truffles. Each scoop should be rolled into a smooth ball (see above picture). Once all of your truffles are made, place the sheet tray in the freezer for 1 hour. 
  4. Melt your chocolate with your coconut oil in a double boiler or Wilton Candy Melt Pot.
  5. Take your coconut truffles out of freezer and begin to coat each one in chocolate. You can use a folk to place the coconut balls in the chocolate. Once they are evenly coated place them on a cookie sheet and sprinkle with coconut flakes. When all your truffles are done place them in the fridge to harden. Let them harden for 1 hour before serving.

 

 

Kale Chips

Kale Chips

A simple snack that’s easy and so good!

Ingredients 

  • 1 bunch of kale
  • 2 tablespoons of olive oil
  • salt for sprinkling

Instruction 

  1. Preheat an oven to 325 F°. Line a cookie sheet with natural parchment paper.
  2. With a knife or kitchen shears carefully remove the leaves from the stems and tear into pieces. Wash and thoroughly dry kale. Drizzle kale with olive oil.
  3. Place the sheet pan into the oven and bake until crispy checking it at 10 mins. It should take about 15-20 mins depending on how hot your oven is.
  4. Once the kale chips are done sprinkle them with salt and serve.

Chicken Piccata

I’ve switched gears this past month and started featuring a lot more cooking on my blog and Instagram. Cooking has been a really great escape and a fun activity me as well as the rest of my family. I hope you enjoy the recipes and please tag me on Instagram if you make any of my recipes along with any feedback. 

Chicken Piccata

Ingredients 

  • 1 1/2 pounds pounded chicken breasts
  • Salt & Black Pepper
  • All purpose flour for dredging 
  • 3 tablespoons of butter
  • 4 tablespoons olive oil
  • 1/4 cup lemon juice
  • 1/2 cup chicken or veggie stock 
  • 1/4 cup capers rinsed 
  • 1/3 cup fresh parsley chopped
  • 4 slices of lemon 

Directions

  1. Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  2. In a large skillet over medium high heat, melt 2 tablespoons of butter with 2 tablespoons olive oil. When butter and oil start to sizzle, add 2 chicken and cook for until golden brown. When chicken is browned, flip and cook other side. Remove and transfer to plate. Remove pan from heat and add chicken to the plate.
  3. Add the lemon juice, stock and capers to your pan.  Bring to boil, scraping up brown bits from the pan. Return all the chicken to the pan and your lemon slices and simmer for 5 minutes. Remove chicken to platter.  Garnish with parsley.

I used a Le Creuset 5 quart braising pan to make this dish.

Naan Bread

Hope everyone had a nice holiday weekend. I did a lot of cooking this weekend including this amazing Naan bread. The girls and I made it together which was a really fun activity.  I’ve also been enjoying my Alo yoga class at home taught by Tom Morley. If you’re interested you can sign up at  Global Tribe Retreats. Classes begin everyday at 9:30 am and meditation at 8:30 pm in the evening. 

Naan Bread

 

Ingredients 

  • 1/2 cup milk
  • 1 teaspoon sugar
  • 2 teaspoons dry yeast
  • 3 1/3 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoon salt
  • 3/4 cup greek yogurt (or any yogurt or sour cream)
  • 1 egg

Instructions 

  1. In a small bowl mix warm milk, sugar, and yeast. Let stand for 15 mins until the yeast is activated. 
  2. In a large mixing bowl combine flour, salt, and baking powder.
  3. In a separate small bowl combine yogurt and egg.
  4. Once your yeast is activated add your yeast mixture to your flour mixture. I used my Kitchen Aid mixer with my dough hook attachment. Mix together until it becomes a sticky dough. If the dough is too dry keep adding milk until you get your desired consistency. If the dough is too wet add a little extra flour. 
  5. Once all your ingredients are combined gently knead your dough into a ball.
  6. Spray a bowl with olive oil, and place the dough inside of it. Cover with a damp towel and place your bowl in a warm area to rise for about 2 hours. 
  7. Once the dough has risen it should be about doubled in size. 
  8. Once the dough has risen, cut the dough into 12 pieces and form them into balls.
  9. Now it’s time to make your Naan. We used a cast iron skillet but you can use any heavy bottomed skillet. Oil your skillet and heat to medium. Working with one ball at a time, roll it out until it is about 1/4 inch thick or approximately 6 inches in diameter. Place the rolled out dough onto the hot skillet and cook until the bottom is golden brown and large bubbles have formed. Flip the dough and cook the other side until golden brown as well. Stack the cooked flat bread on a plate and cover with a towel to keep warm as you cook the remaining pieces.

Hummus

Hummus

Ingredients

  • 1 can of chickpeas drained and liquid saved
  • 3 tablespoon of tahini (love the Mighty Sesame brand tahini)
  • 1 garlic clove
  • 2 tablespoons of olive oil
  • 1/2 teaspoon cumin
  • 1/2 lemon juice
  • salt & pepper to taste ( I use 1 teaspoon salt)

Directions

Put all your ingredients into the Cuisinart (or blender) and blend. Once it’s all blended, slowly add your liquid from the chickpeas until you get your desired consistency. Garnish with a sprinkle of paprika. 

Below is a picture of the flower arrangement from our Sedar last night. I asked my daughter to pick some flowers for me and I gave her a bag. When she brought the flowers back it looked so pretty in the bag I used it as our centerpiece. A fun way to recycle a beautiful bag.

Nesting

img_2791All this nesting at home has made me want to do some refreshing. I love my new dishes (way overdue). Other items that could use some sprucing are apronsoven mittsdish cloths, linen napkins, and sheets. Madewell just launched a collaboration with Parachute Home check it out here. I also spotted these colorful indoor outdoor bistro chairs at Anthropologie ( & these both 40% off! ) thinking they would be cute around my kitchen table. While I was searching for chairs I happen to find a cozy I Stole My Boyfriends sweatshirt and tee ON SALE (here & here).

In other news Everlane just launched their $98 clog. While browsing Everlane check out the new sand color way of the Utility Jumpsuit (love!) great for lounging. Also part of their new arrivals is the Form Crossover and Day Crossover sandal.
