Edamame Hummus

If any of you have been following my IG account you’ve noticed I’ve been having a moment with tartine’s (tartine is French for open faced sandwich). Yesterday’s was hummus, Persian cucumber, and avocado. Monday’s was egg salad and arugula, and Sunday was mashed avocado and arugula. I was thinking of a fun way to spruce up my hummus tartine and Edamame Hummus would be perfect. Recipe below.

Ingredients 

  • 2 cups frozen shelled edamame cooked according to the directions 
  • 1 block tofu *preferably silken but any version can work
  • 1 teaspoon of salt (sometimes I add extra but taste before adding)
  • 1 1/2 teaspoon cumin
  • 1 garlic clove
  • 1/4 cup olive oil 
  • 1/3 cup fresh lemon juice

Directions

Place all the ingredients into the food processor and process until smooth. Taste and adjust the seasoning if it needs more lemon or salt. 

Can be made ahead of time and stored in the fridge. Great with veggies, pita chips, or the base of a tartine sandwich.

Pizza Party

I wanted to share a fun family dinner activity that you can all do at home. We had a family pizza night where we were all in charge of making our own pizza. We had a taste test at dinner and picked a winner. Everyone really got into it so this is definitely something we will continue to do. Here’s the simple pizza dough recipe we used.

Dough Ingredients 

  • 1/2 cup milk
  • 1 teaspoon sugar
  • 2 teaspoons dry yeast
  • 3 1/3 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoon salt
  • 3/4 cup greek yogurt (or any yogurt or sour cream)
  • 1 egg

Instructions 

  1. In a small bowl mix warm milk, sugar, and yeast. Let stand for 15 mins until the yeast is activated. 
  2. In a large mixing bowl combine flour, salt, and baking powder.
  3. In a separate small bowl combine yogurt and egg.
  4. Once your yeast is activated add your yeast mixture and egg-yogurt mixture to your flour. I use my Kitchen Aid mixer with a dough hook attachment. Mix together until it becomes a sticky dough. If the dough is too dry keep adding milk until you get your desired consistency. If the dough is too wet add a little extra flour. 
  5. Once all your ingredients are combined gently knead your dough into a ball.
  6. Spray a bowl with olive oil, and place the dough inside of it. Cover with a damp towel and place your bowl in a warm area to rise for about 2 hours. 
  7. Pre-heat your oven to 450 °F.
  8. Once the dough has risen it should be about doubled in size. 
  9. Place your dough on a dusted flour surface and cut it into four pieces.
  10. With floured hands, gently stretch your pizza dough to fit a pizza tray/pan (pan should be floured & we used 12 inch pizza pans). You can also use a rolling pin to roll it out. See above picture for thickness.
  11. Now it’s time to make your pizza. Place your sauce (either tomato or pesto) on your dough and then add all your desired toppings.
  12. Place your pizza in the oven it should take about 10-12 minutes but it depends on how hot your oven is. About 2 minutes before your pizza is ready, slide it off the tray and let the bottom crisp on the oven rack or pizza stone if you are using one.

Pizza Ingredients 

  • Shredded Mozzarella Cheese
  • Parmesan 
  • Pizza Sauce
  • Flour for dusting
  • Desired toppings

Topping ideas: fresh mozzarella, kalamata olives, black olives, pepperoni, salami, fresh basil, feta, and mushrooms.

You will need 12 inch pizza pans, pizza wheel, dough scraper, and mixing bowls

Let’s Get Organized

This past month I’ve been doing a lot of purging and organizing at home. I thought it would be nice to connect with an expert in the field and hear her thoughts on keeping organized during this unique time at home. I connected with organizing guru Amy Suddleson / Lifestyle Organizer & Designer. Since 2008, Amy Suddleson has been a leader in lifestyle organizing and design. Amy has provided full service home organization, transforming spaces with her creative, functional and maintainable strategies paired with her stylish visual aesthetic.

Julie: Why do your clients reach out to you?

Amy: People reach out to me because they are overwhelmed with their space and just don’t know where to begin. I help them create a more simplified way of living by organizing, eliminating, and creating a peaceful space that provides balance in their lives. I have found that living an organized life, in a well-maintained home, eliminates internal chaos, leaving people feeling mentally and emotionally clearer – and ultimately, allowing more time to appreciate the people and things they love.

Julie: Any tips on staying organized during this unique time at home?

Amy: I believe in creating a flexible weekly schedule. You need structure in your day but also some flexibility. For example making your bed, opening your shades, scheduling your workouts, meal prep, and working. I do this by creating time blocks. For instance, cleaning the whole house at once can be overwhelming so I schedule it in blocks throughout the week. The task doesn’t seem as daunting if you break it up. I like using a digital calendar for myself but I find that kids really benefit from a visual calendar. A schedule is really important for creating a sense of normalcy for ourselves and the whole family during these unprecedented times.

Julie: What are your favorite bins for storing staples like flour, sugar, and snacks?

Amy: My favorite bins, baskets, and canisters are

Julie: What are your favorite containers for organizing kitchen utensils in drawers and silverware?

Amy: My favorites kitchen drawer tray is Bamboo Silverware tray and the iDesign Linus expandable cutlery organizer.

Julie: What are your favorite hangers, jewelry organizer, and drawer organizers for the closet?

Amy: I use so many different types of items but here are a few. There is no one size fits all so it depends on my clients space and needs.

Weekly Wrap-up

Yesterday I spent some well needed time poolside to relax and unwind. I went outside, soaked up the sun, and sipped an Arnold Palmer. It was a nice way to conclude a week full of cooking, blogging, and a great chat with Professional Lifestyle Organizer Amy Suddleson. I’m excited to share what I learned from Amy with all of you next week. 

Since the weather has warmed up in LA I was finally able to wear my Kule shirt dress (look for less here), and my Banjanan Flora dress (now on sale along with these two Juliet Dunn and Lemlem dresses). I realized my J. Crew swimsuits from last season could use an update, and I’m going to take advantage of J Crew’s 30% off sale. I recently replaced my straw hat in the above picture (never enough shade). While lounging poolside, I browsed & Other Stories and found a Jenni Kayne look for less cotton cardigan along with this white eyelet mini, chainlink pearl necklace, and organic cotton tank.

Thai Quinoa Salad

Thai Quinoa Salad

Ingredients 

  • 1 cup cooked quinoa with veggie stock
  • 1 cup shredded red cabbage
  • 1/4 thinly sliced scallions
  • 1 cup shredded carrots
  • 1 cup edamame 
  • 2 leaves of flat kale destemmed and chopped
  • 1/3 cup chopped cilantro 
  • 1 cup arugula optional *to serve with the salad

For the dressing

  • 1/3 cup peanut butter
  • 1 tablespoon teaspoon ginger
  • 5 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 4 teaspoons sesame oil 
  • Juice of half a lime
  • 1 tablespoon honey or agave *optional (depends if you like your dressing sweet)
  • 1-3 tablespoons of water to thin the dressing if necessary

Directions

  1. Cook the quinoa according to the package with vegetable stock and allow to cool to room temperature.
  2. Place your quinoa and all your vegetables into a medium size bowl
  3. Make the dressing. If your peanut butter is too thick you can microwave it for 30 seconds to loosen it up. Combine all the dressing ingredients into a small food processor, and blend until smooth. If the dressing is too thick add water and continue to blend (1-3 tablespoons if needed) until you get the desired consistency. You want it to be the consistency of a ranch dressing so it can pour easily.
  4. Time to dress the salad. I alway start off using half of the dressing, then mixing and seeing how much more it needs. If you have any leftover dressing it can be used on noodles or another salad. 
  5. I served the salad in a bowl over a bed of arugula.

Pantry Pasta

Last week we had a Pantry Pasta night. It’s a simple meal that uses up any leftover ingredients you might have. I had a bag of penne pasta, 1 jar of Whole Foods marinara sauce, snap peas, regular peas, and kale. I threw it all together and served my Classic Meatballs on the side.

Ingredients 

  • 1 pound of pasta
  • 1 jar of marinara sauce 
  • 1 cup of frozen peas thawed 
  • 3 flat kale leaves destemmed and chopped 
  • 1 cup of snap peas trimmed 
  • 2 garlic cloves minced
  • Olive oil 
  • Salt & pepper 
  • Parmesan for sprinkling 

Directions 

  1. Boil your pasta as directed in a 8 quart stock pot
  2. Warm a medium sized skillet to medium heat and sauté your garlic until fragrant with olive oil.
  3. Add your vegetables and continue to sauté until they are cooked through but still a little crisp. 
  4. Warm your tomato sauce in a saucepan.
  5. Drain your pasta in a colander and put it back into the pot. 
  6. Add your vegetables to your pasta.
  7. Add your desired amount of tomato sauce to the pasta and vegetables and toss to coat.
  8. Serve in a bowl and sprinkle with parmesan.

Blue & White is Right

Happy Friday everyone! I guess I’ve adjusted to this new way of life. I’ve been keeping busy cooking as you can tell from my blog posts and instagram posts. I made my first sourdough bread yesterday which was really fun! I finished Catch and Kill this week and I’m loving Little Fires Everywhere on Hulu. I’m continuing to take long walks in my neighborhood and loving my yoga classes at home. Hope everyone has a great weekend.
